A Simple Recipe For Spaghetti Squash As A Side Dish
Fall and Winter are fast approaching and this dish will be great for warming your house and fill it with a wonderful aroma too. Our house is changing in our menus and food choices as are many others. We are adding more vegetable choices. I have never tried Spaghetti Squash and decided that it would be good to try it. We found that we like it and will be preparing more of it. I looked on the Internet to find out how to cook or prepare it and did the basic steps. Since I cannot have tomatoes in my diet, I made up my own simple and delicious recipe that I would like to share with all of you.
Buy your Spaghetti Squash at a local Farmer's Market to get the freshest and ripest Squash. Pick one out that has a stem that you can hold onto. That will be explained later.
When you get home wash your squash in the sink and dry it off until you are ready to cook it. Squash can last a week or two on the counter without going bad.
When you are ready to prepare your Spaghetti Squash, get out a Pyrex cassarole dish big enough to hold the squash when it is cut in half.
Baked Spaghetti Squash Parmesan
You will need:
1 Spaghetti Squash
Butter Flavored Cooking Spray
6 TBLS Butter (I used Unsalted)
2 TBLS Garlic Powder
2 TBLS Onion Salt
3/4 - 1 Cup Parmesan Cheese
Pre-heat oven to 375 degrees.
Spray the Pyrex or CorningWare baking dish with the Butter Flavored Spray Oil until it is coated well. Place the Squash in the dish and cook on 375 degrees for 1 Hour.
When the hour has passed take the dish and Squash out of the oven and set on a potholder for about 10 minutes to cool.
You may need three hands for this next task. Hold onto the stem with a pot holder. Cut down the squash lengthwise with a butcher knife. Cut off the stem and lay the two halves cut side up.
Scoop out the seeds with a spoon. After doing that take a fork and scrap the meat out of the shell. I just scrapped it up and left it in the shell. It can be taken out or left in. The preference is yours.
Lay the sliced butter on the squash. Sprinkle on the Garlic Powder and Onion Slat and then top with the Parmesan Cheese.
Place the dish back in the oven and bake for an additional 15-20 minutes.
Salt and pepper to taste.
Delicious and Simple! Enjoy with a Main Dish or by itself.

Sandi 3m, Thanks and I hope that you do like it. It was simple and I am not supposed to even have dairy products, but there has to be a middle ground with that. I was going to use Olive Oil instead of the butter, but ..... I wiil have to try that another time and post that here as well. I only got one squash just to see if we liked it.

I think I'm the only person in Australia who knows what a spaghetti squash is. I used to buy them when I lived in the UK. Thanks for the recipe - I now know a new way to cook it, if I ever find one!

We have these available and my was started to buy on in the grocery store last week, she thought they were a bit too expensive but maybe we need to go ahead and buy one just to try this recipe.

Best place to buy any vegetable is right off the farm! We have an orchard that is open almost year round and they are selling the winter crops right now. I have substituted Corn Oil for the Butter and it tastes the same to me. I have to get off all dairy products and I am addicted to butter so this helps. Now the cheese in this--that is another hill to overcome. I don't eat that much cheese anyway because I am lactose intolerant.
I have also eaten it with just the garlic powder, Onion Salt and a little bit of celery seeds and no cheese and it is just as good. I have also baked it with the real onions and celery chopped up into it and that is equally as good.
I would like to find a crunchy topping for it, but am at a loss as to what that would be.

Luscious stuff - I fixed spaghetti squash last night. I go light on the garlic, use an herbal mix - never thought about putting on the cheese! Sounds good!
