AUTHENTIC ORIGINAL WHOOPIE PIES
Whoopie Pies
Whoopie Pies originally were made in Germany. It is not an Amish recipe as some believe. A Whoopie Pie is two small cakes that are matched with each other according to shape and size with a filling put in between them. These are so yummy it is hard eat just one.
It was about 3 years ago when I started noticing that many places were selling them. Just by looking at them, I could tell they weren't the original recipe. I have also seen them in different flavors. My grandmother's side of the family is German (Entler, Rank). Her great grandma passed down the recipe to her grandmother, her mother and it has passed down to my mother and then to me and I passed it down to my daughters.
This recipe is unique as is the filling. It is not a frosting or icing that you would use for a cake and the cake batter is also different than a regular chocolate cake. Both the cake and filling makes a stiff batter. You will need a sturdy mixer to make these. They also freeze quite well.
Cake Batter
Pre-Heat Oven to 400 degrees. You will make this as you would any cake.
1 cup Shortening
2 cups sugar
2 Eggs and 2 Egg Yolks (keep the whites for the filling)
1 cup HOT Water,
1 cup sour Milk *to make sour milk just add 1 tbls lemon juice to milk)
Mix all these together for a minute or two.
Sift together these ingreditents:
4 cups flour
1 cup cocoa
1/2 teas salt
1 teas Baking Powder
2 teas Baking Soda
Ad the dry ingredients to the wet ingredients gradually.
Drop by spoonfuls onto greased and floured cookie sheet. I use Baker's Joy. Bake for 8-10 minutes, depending on your Oven temp range. Remove from cookie sheet and allow to cool completely. Sort through them and match up the same sized ones. You will have different sized one even if you measure by teaspoons. Now to make the filling:
Cookie Filling
In a bowl add the 2 Egg Whites your saved from the Cake Batter
2 teas Vanilla
4 teas Flour
2 tblsp Powedered Sugar (you will add 4 cups later)
4 tbls Milk
1 1/3 cup shortening
Beat together all these ingredients. Then add the 4 Cups of Powdered Sugar and mix well. Fill in 2 cookies with flat sides together. I use a teaspoon of filing. I usually have left over filling. This filling is good in between two Graham Crackers. I bet you can't eat just one!!

I recently saw a tv show about whoopie pies. Yours look so authentic and delicious, especially since nothing beats a homemade recipe!

I saw a baking pan while shopping a few days ago that was specifically designed for baking Whoopie Pies. I'll have to go back to the store to buy it. Thanks for publishing this Hub.
Daisy, this recipe does not pour like a regular cake recipe. The batter is too thick to do that. This is why when you see thin cakes tht say they are Whoopie Pies, they are not to original.
